What is a good popover recipe?
A simple & tasty Popover recipe:
- 1 C flour
1/4 tsp salt
3 eggs
1 C milk
1 tbsp unsalted butter, melted
2 tbsp unsalted butter, chilled
As you preheat your oven to 425°F, blend the flour, salt, eggs, milk and melted butter for 1 to 2 minutes, until it looks like a heavy cream.
Spray a popover pan with a non-stick spray and heat for 2 minutes in the oven, then divide the chilled butter into 6 pieces and drop one into each pan cup and place back in the oven for 1 minute.
Fill each cup half full with your batter and then bake for 20 minutes at full temperature, then reduce the heat to 325°F and bake for another 15 to 20 minutes.
NOTE: Since oven temperatures can vary, baking times are estimates.
