Here's one of our favorite slow cooker Chili Recipes:

Ingredients for the chili:

  • • 3tbsps vegetable oil
  • • 2 med yellow onions, diced
  • • 1 med red bell pepper, dice
  • • 6 med garlic cloves, finely chopped
  • • 1/4C chili powder
  • • 1tbsp ground cumin
  • • 2 lb lean ground beef
  • • 1-1/2tsp kosher salt, plus more as needed
  • • 1 (28-ounce) can diced tomatoes
  • • 1 (14-ounce) can tomato sauce
  • • 2 (15-ounce) cans kidney beans, drained & rinsed
  • • 1/4C coarsely chopped pickled jalapeos or green chiles, drained

Ingredients for serving:

  • • Shredded cheddar cheese
  • • Thinly sliced scallions
  • • Sour cream

    Heat the oil in a large frying pan over medium heat until shimmering, then add the onions, bell pepper, and season with salt.

Cook, stirring occasionally, until softened, about 8 mins.

Add the garlic, chili powder, and cumin, stir to coat the vegetables, and cook until fragrant, about 1 min.

Add the ground beef and measured salt, cook, breaking the meat into small pieces until the beef is no longer pink, about 7 mins.

Pour the mixture into the slow cooker, and add the diced tomatoes plus their juices, tomato sauce, and beans, and stir it all together to combine.

Cover & cook until the chili thickens & the flavors meld, about 8H on low or 6H on high. Stir in the jalapeos or green chiles.

Serve with the cheese, scallions, & sour cream.
