What is the healthiest oil to fry in

It will vary, as 'temperature' or smoke point of the oil may break down or produce unwanted compounds. The 'smoke point' is the temperature that causes oil to start smoking, which produces toxic fumes and harmful free radicals (the stuff we’re trying to avoid).

As per the Cleveland Clinic, healthy oils that have a higher smoking point include almond, avocado, sunflower and refined olive oil.

Please note that these oils are best for searing and browning, but deep frying is unhealthy and they do not recommend it.

According to Caloriesecrets.net, avocado oil is extracted in a similar process to olive oil; the oil is removed from the flesh part of the avocado. Avocado oil is high in nutrients, and it has a high smoking point of over 400 degrees Fahrenheit (204.4 degrees Celsius). The down side to using avocado oil is it is expensive and can be hard to find in grocery stores.
