As it turns out, mashed cauliflower was already removed from the 99s restaurant menu. We found a member from Southbeach-diet-plan.com who emailed 99s to find out exactly what the ingredients are so that she can make it herself.
Someone at the corporate office emailed her back saying that they may contain some potatoes, but that she wasn’t sure, since they were likely made not at 99s but by another food distributor.
While the company did not publish the recipe for their mashed cauliflower, you may want to try this Mashed Cauliflower recipe from Wholefoodsmarket.com:
Ingredients:
1 medium head cauliflower, trimmed and cut into small florets (about 6 to 7 cups)
1 tablespoon extra-virgin olive oil
Fine sea salt and ground black pepper, to taste
Method:
1. Bring a large pot of salted water to a boil. Add cauliflower and cook until very tender, about 10 minutes.
2. Reserve 1/4 cup of the cooking liquid and then drain well and transfer cauliflower to a food processor.
3. Add oil and reserved water, 1 tablespoon at a time, and purée until smooth. (Or, mash cauliflower with a potato masher).
4. Season with salt and pepper and serve. Enjoy!
