Sodium nitrate and sodium nitrite used to preserve processed meat form nitrosamines, a carcinogen when added to protein laden foods. Nitrosamines damage body cells. Those who eat 3.5 ounces of processed meat daily have a 36% higher risk of colorectal cancer than those who abstain from it.
